Sally's Breakfast Burrito
Packed with eggs, sausage, crispy Tater Tots, and avocado, it’s a delicious and satisfying way to start your day!
Sally’s breakfast burritos are always a crowd favorite. They are usually loaded with refried beans, cheese, eggs, sausage, and a secret ingredient—tater tots—wrapped in a tortilla. They're seriously so delicious. I love the crunchy texture of tater tots in the burrito!! Really, there is no right or wrong way to make a breakfast burrito… and no need to write down a recipe for this because this is so simple, but we love the way Sally makes it and want to remember it… so here I am. Ingredients
2 large tortilla (I use 10 inches flour tortillas)
2 eggs, scrambled
2 sausages, cooked - I use county style, Italian (mild/hot mix) or chorizo
1 can (16-oz) of refried beans, heated
about a dozen of Tater tots, baked - I use mini Tater tots
salsa
sour cream
Mexican cheese mix
1/2 avocado, sliced
about 1/4C cilantro, chopped
Instructions
Assemble the Burritos: In the center of each tortilla, layer refried beans, sour cream, scrambled eggs, sausage, cheese, Tater Tots, salsa, cilantro, and avocado. Fold in the sides, then roll up tightly and neatly. You’ll have plenty of leftovers—especially salsa, sausage, and refried beans—but that’s a good thing! It means you can enjoy another delicious burrito tomorrow morning.
