Gina's Sweet and Creamy Fig and Goat Cheese Bites
This is one of my go-to appetizers during fig season! It’s incredibly simple to prepare, absolutely delicious, and always a hit with guests!
Gina made a delicious appetizer when she was home in October, and it was a huge hit! It looks fancy, but it’s incredibly easy to make. We don’t really need a recipe for it because it’s so simple, but I’m writing down anyway so I won’t forget it!

Make about 20
Ingredients
5~6 figs, cut off both ends and sliced (I slice into 3~4 pieces depending on the size of the figs)
about a half of 4-oz goat cheese, at room temp
about 3~4 sprigs of thyme or 1 sprig of rosemary, finely chopped (about 1 tsp)
1 heaping tsp honey
walnuts or pistachio, roughly chopped
Sea salt flakes
Instructions
Mix goat cheese, honey and thyme with a small spatula until well combined. Set aside. (Note: microwave for about 10 seconds if the goat cheese is not spreadable.)
If using walnuts - Toast walnuts in a dry pan over medium heat for 3~5 minutes, stirring occasionally with a wooden spoon, or until golden and fragrant. Transfer to a plate, cool and chopped.
3. Assemble: Place fig slices on a platter, drop about 1 tsp the goat cheese mixture on each slice. Top with pistachios or walnut and sprinkle a tiny pinch of flakey sea salt. That’s it! So simple!
