Restaurant-Style Japanese Dressing (But Better!)
This dressing is a staple in Japan, often spotted in Japanese grocery stores or served at restaurants — and it’s surprisingly easy to recreate at home.
This dressing is quite popular in Japan — it’s absolutely delicious and packed with flavor! You get sweetness from the apple and carrot, savory notes from ginger, and onion, tanginess from rice vinegar, and umami from soy sauce. The recipe is just a guideline, so feel free to adjust the ingredients to suit your taste. The only downside is that it lasts only about 5~7 days due to the fresh veggies and fruit — but in my humble opinion, it’s totally worth making!
Make about 1C
Ingredients
1 tsp ginger, peeled and finely chopped or grated
1/4C carrot, peeled and roughly chopped
1/3C apple, peeled and roughly chopped
2 tbsp onion, peeled and roughly chopped
3 tbsp rice vinegar
2 tbsp low sodium soy sauce
6 tbsp olive oil (you can use vegetable oil or any neutral oil you’d like.)
1 tsp sesame oil
1 tsp sugar
a pinch of sea salt
Instructions
Add all the ingredients to a bowl and blend with an immersion blender — start at a low speed and gradually increase to high until the dressing is very smooth. If you’d like a thinner consistency, add water (or vinegar) 1 teaspoon at a time until it reaches your desired texture. Transfer to a jar and store in the fridge for up to a week.
